Students see butchery skills


More than 50 students saw butchery skills in preparation for their Year 9 food and nutrition course. James Edwards from Stilton Catering Butchers jointed chickens and showed them ways of producing burgers, to prepare them for a gourmet burger competition where they have to formulate their own flavourings.

Food technology teacher Natasha Chiremba said: ‘This was the launch of our ‘Gourmet Burger Challenge’ competition so James talked to the students about mince, its preparation and provenance. He showed them a burger press, talked about food traceability, different farming methods and careers in the industry.

‘It is a requirement of the GCSE that students know how to joint a chicken three different ways. We have got some of the highest standards of animal welfare in the world, so we need younger people coming into the butchery industry. It is a great career with butchers in demand all over the world. Thanks to James and Stilton Catering Butchers for coming along to share their expertise, I am hoping that someone from the firm will be able to come back and judge the competition!’
